Pumpkin Time

Around here, Fall means Pumpkin season. It’s officially Pumpkin season when I start to make these Pumpkin Chip muffins. They are full of pumpkin flavor and chocolate chips.

Have kids or aren’t in the mood for a full sized muffin? No problem. We love the mini muffins around here. Same great taste in a smaller package.

There are also the pumpkin whoopie pies. These are super moist cake-like sandwiches with vanilla filling.

Not a fan of vanilla? That’s ok. We’ve got chocolate filling too!
Whoopie pies are an old Pennsylvania Dutch treat. Their name came from when farmers were working in the fields and would stop for a lunch break. They would shout out “Whoopie” when they opened their lunch pails to discover their wives had made them the treat.

Basic Cakes

Chocolate with chocolate filling and chocolate icing. This is one of the best chocolate cakes ever!

Chocolate with vanilla cream filling and fudgy icing. This is a very rich but delicious cake.

Strawberry with strawberry icing. This is my oldest daughter’s favorite. Super sweet, just like her!

White chocolate cake with raspberry filling and a white chocolate frosting. Surprisingly light. 

Red velvet with peanut butter icing. This is my husband’s favorite cake. Very rich and creamy.

Every Boy’s Dream

Aren’t trains fun? I think every boy enjoys playing with trains at some time during their childhood (and some into adulthood!). When my son turned 2 this year, it was an easy decision to make a train cake.

For this cake, I used my classic chocolate cake mix and my classic white cake mix which was enough to make five train cars, one engine, and the star in the middle. The star in the middle is a little larger than a big cupcake. It’s just something that I’ve done for each of my children on their birthdays. They always get a star!

I used my son’s favorite treats to “load” the cars. I tinted vanilla icing to make the cars colorful and for the piping accents.

This cake was so much fun to make. It was even more fun to see the kids’ excitement as they saw the cake at my son’s party. CHOO! CHOO!

Starting It All…

The cake that started it all. Chocolate cake with chocolate icing.

I made this cake for the first time about 10 years ago. It was my first homemade, from scratch cake. It is the one people ask for most. Classic. Good.

This is a very rich, heavy cake. Make sure you have a cup of milk to go with it!
